We have all been in various life chapters where life feels too chaotic to eat healthy. We get it- life can be a totally wild ride with so many unexpected challenges. However, we so passionately feel that health can always be a priority, no matter what life brings. While healing plans, supplement protocols, recalibrating body systems, and multiple-diagnoses can be complicated (we’re here for you on those too), there are plenty of ways healthy living can be made possible for anyone- no matter financial status, lifestyle or location. No matter who you are, there is always a time and need for ‘easy’ for eating healthy.
When it comes to food, at Woodbury Wellness we feel that crock-pot cooking is one of the easiest, nutrient dense, and financially feasible ways to make your nutrition easy. The past week, I personally made three crockpot recipes and tracked the time each step took. It took exactly 4 minutes to write down the ingredients from the three recipes, 14 minutes to food shop, and 6-7 minutes to put everything in the crockpot the day of cooking. The result? The most delicious, nutritious meals at the end of wildly busy days. Bonus: the meat and veggies are easily digestible when cooked in the crockpot. It will feel like someone cooked for you all day. Or, if hosting, it will look like you cooked all day your family or guests.
It’s also easy to make the portion large enough to have leftovers for multiple following meals. With those prep times, it’d be hard to order take out or prepared meals in less time than that. Therefor, it saves you time and money, while giving you more optimal nutrition than any form or meal ordering. In our next post, we will glamorize the word ‘simple’ for you when it comes to health. For now, crockpot cooking is the perfect example of how simple is better for your wellbeing.
Below is my favorite crockpot recipe from the past week. You can add in sweet potatoes or squash at the beginning to make it a complete meal. You can also add in any greens thirty minutes before it’s finished. If it’s spinach, add it in the last minute.
Shredded Beef:
- Put a 3 lb beef chuck roast in the crockpot.
- Cover the meat with: 1 small onion diced, 5-6 cloves garlic minced, 2 tsp dried oregano, 1 tsp sea salt, ½ tsp black pepper, 3 bay leaves, ¾ cup beef broth, ¼ cup fresh lime juice, 1 tbsp apple cider vinegar
- Cook for 4 hours on high or 8 hours on low.
