Creamy “Mac N’ Cheese”

This is by far my favorite dish and I could easily eat it every day. It is incredibly creamy, delicious, nourishing, filling and comforting. It is allergen free, AIP, and sure to please anyone who loves food that is dining with you.

  • 13 x 9 baking pan or cookie sheet
  • Measuring cups
  • Measuring spoons
  • Strong knife
  • Blender


Cheese Sauce Ingredients:

  • 1/2 Butternut Squash, OR 2 cups pre-cubed butternut squash
  • 2 tbsp Avocado Oil
  • 1/2 Medium Yellow Onion
  • 1 Garlic clove
  • 2 cup Coconut Milk
  • 1/4 cup Bone Broth
  • 1 tbsp Apple Cider Vinegar
  • 3 tbsp Nutritional Yeast
  • 1 tbsp Salt
  • 1 tbsp Ground Turmeric
  • 2 tbsp Arrowroot Starch

Cauliflower Ingredients:

  • 6 cup Cauliflower
  • 2 tbsp Avocado Oil
  • 1 tbsp salt

Topping Ingredients:

  • 1 cup Plantain Chips
  • 2 tbsp Fresh Chives


Prep Work

  • If you have time beforehand, do these steps to make your actual time cooking dinner less. If you don't have time, no worries, do it all at once.
  • Preheat oven to 400 Degrees F.
  • Butternut Squash: Place half of a full butternut squash directly on oven rack- OR if using pre-cubed squash, place 2 cups in baking pan.
  • Cauliflower: Cut into florets (6 cups), put into baking pan, cover with 2 tablespoons avocado oil.

Cheese Sauce

  • Heat avocado oil in medium saucepan on medium heat.
  • Add onion and garlic, cook for 5 minutes.
  • Add pre-cooked cubed squash, coconut milk, bone broth, vinegar, nutritional yeast, salt, turmeric, stir well.
  • Cook for 10 minutes on medium heat.
  • Stir in Arrowroot starch and let thicken for a few minutes.
  • Carefully spoon it into high speed blender and blend.

Pour Cheese Sauce over cauliflower in dish.

  • Place in 150 degree oven to keep warm until you’re ready to eat soon.
  • Right before serving, add plantain chips and chives as the topping.
  • ENJOY!  


  1. If you have leftovers and want to save for a later day, place in airtight container and place in freezer. When ready to eat: thaw, re-heat in sauce pan with Medium heat, add more crushed plantain chips as topping.+
